Have a Little Pizza of My Heart

Are we 'weirdoughs' for wanting to eat pizza every day? We stop ourselves...but, this spicy beet and chickpea pizza is making it really difficult.

Beet Pizza Recipe

BeetPizza

What you need:

Beet Sauce:

  • 1 Large Beet

  • 2 Tbsp Lemon Juice

  • 1/4 Cup Coconut Kefir

  • 3 Cloves Garlic

  • 1 Tsp Cumin

  • 1 Tsp Pink Salt

  • Optional: 1/2 Tbsp Olive Oil

Chickpeas:

  • 1 Cup Chickpeas

  • 1 Tsp Paprika

  • 1 Tsp Cayenne

  • 1/2 Tsp Cumin

  • 1/2 Tsp Chipotle

  • 1/2 Tsp Pink Salt

Sesame Kale:

  • 1 Kale Bunch

  • 1/3 Tbsp Sesame Oil

  • 1 Tsp Tamari

  • 1/2 Tbsp Black Sesame Seeds & Salt

Dill Sauce:

  • 1/4 Cup Coconut Kefir

  • 1/2 Tbsp Lemon Juice

  • 1 Tsp Olive Oil

  • 1 Clove Garlic

  • 1 Tsp Dill

  • 1/2 Tsp Pink Salt

  • 1 Tsp Beet Crystals

  • 1/4 Tsp Pink Pitaya Powder

Pizza Crust:

  • 2 Cups of  Light Buckwheat Flour

  • 1 Tbsp Apple Cider Vinegar

  • 1 Tsp Baking Soda

  • 1 Tsp Baking Powder

  •  2 Tbsp of Olive Oil

  • 2 Crushed Garlic Cloves

  • 1 Tsp Fresh Basil Finely Chopped

  • 1 Tsp Dried Oregano

  • 1/2 Tsp Dried Rosemary

  • 1/4 Tsp Thyme

  • 2/3 Cup of Warm Water

  • 2 Tbsp Coconut Mylk
  • 1 Tbsp Maple Syrup

 

What to do:

Beet Sauce:

  • Peel beet

  • Chop the beet into small cubes

  •  Boil down the beet until it is soft

  •  Blend the beet in a vitamix / food processor

  • Crush garlic

  • Add in all other ingredients and blend

  • Let cool

Chickpeas:

  • Drain and rinse chickpeas

  • Pour into a mixing bowl

  • Add in spices and massage

  • Roast at 425 for 20 minutes

Dill Sauce:

  • Blend all ingredients excluding the beet crystals and pink pitaya

  • Blend in pink pitaya and beet crystals

Kale Chips:

  • Rinse kale

  • Tear into pieces

  • Place in a mixing bowl and add in oil and spices

  • Bake at 425 for 10 minutes

Pizza Crust:

  • In a mixing bowl whisk all ingredients

  • Knead

  • Stretch to fit a pizza pan

  • Bake at 425 for 25 minutes (this may depend on your oven)

Pizza

  • Spread beet sauce onto the precooked crust

  • Garnish with chickpeas and kale chips

  •  Bake for an additional 10 minutes at 425 to make your pizza and all the toppings very crispy!

  •  Once the pizza has cooked, drizzle with dill sauce

  • Enjoy!
