The Homer Donut

Was the Simpson's movie anyone else's favourite cartoon as a kid?  These gluten-free and vegan donuts were inspired by the iconic donut within the film. It may not be pink... but blue is our favourite colour after all. Can you believe this was our first time making donuts and a donut recipe? On the weekend we found a donut baking tray and we knew we had to get on it.


Matcha & Blue Spirulina Gluten Free Donut Recipe


What you need:

For Donuts:

  • 1 3/4 Cup Green Banana Flour

  • 1 1/4 Cup Vanilla Hemp Mylk

  • 1/3 Cup Coconut Yoso or Apple Sauce

  • 1/2 Cup Melted Coconut Oil

  • 1/2 Cup Coconut Sugar

  • 2 Tsp Vanilla

  • 1 Tsp Cinnamon

  • 1/4 Cup Matcha Tea Powder

  • 1 Tbsp Raw Apple Cider Vinegar

  • 2 Tsp Baking Soda

  • 2 Tsp Baking Powder

  • 1 Tsp Pink Salt

For Blue Spirulina Icing Glaze:

  • 1/2 Cup Full Fat Coconut Cream

  • 1/4 Cup Coconut Mylk

  • 1/2 Cup Swerve Icing Sugar

  • 1 1/2 Tsp Raw Nice Blue Spirulina

For Black Goji Icing Glaze:

  • 1/4 Cup Full Fat Coconut Cream

  • 2 Tbsp Coconut Mylk

  • 1 Tbsp Coconut Mylk Powder

  • 2 Tbsp Swerve Icing Sugar 

  •  1/2 Tsp Unicorn Superfoods Black Goji Powder

  • 1/2 Tsp Raw Nice Blue Spirulina Powder

Optional: Vegan Sprinkles... we used Goddess Provision Unicorn Sprinkles


What to do:

For Donuts:

  1. Preheat Oven to 350 F

  2. Melt down coconut oil

  3. In a large mixing bowl, toss in all ingredients and mix well

  4. Pour into a greased donut pan

  5. Bake for 20 minutes (this may depend on your oven)

  6. Let cool for 15 minutes

  7. Dip donuts in blue spirulina icing

  8. Freeze donuts for 5 minutes

  9. Drizzle donuts with black goji icing

  10. Dust with sprinkles

  11. Enjoy!
