The Homer Donut

Was the Simpson's movie anyone else's favourite cartoon as a kid?  These gluten-free and vegan donuts were inspired by the iconic donut within the film. It may not be pink... but, blue is our favourite colour after all. Can you believe this was our first time making donuts? We found a donut baking tray this weekend and we knew we had to get on it.


Matcha & Blue Spirulina Gluten Free Donut Recipe


What you need:

For Donuts:

  • 2 Cups Brown Rice Flour

  • 1 1/4 Cup Unsweetened Coconut Milk

  • 1/2 Cup + 2 Tbsp Coconut Sugar

  • 1/2 Cup Melted Coconut Oil or Olive Oil

  • 1/4 Cup Unsweetened Apple Sauce

  • 2 Tbsp Unsweetened Coconut Yogurt

  • 1 Tbsp Vanilla

  • 2 Tbsp Matcha Powder

  • 1 Tsp Cinnamon

  • 1 Tbsp Raw Apple Cider Vinegar

  • 1 Tbsp Baking Powder (I promise it's not too much)

  • 2 Tsp Baking Soda

For Blue Spirulina Icing Glaze:

  • 1/4 Cup Full Fat Coconut Cream

  • 2 Tbsp Melted Coconut Oil

  • 1/4 Cup Coconut Mylk

  • 1 Cup Swerve Icing Sugar

  • 1/2 Tbsp Raw Nice Blue Spirulina

For Black Goji Icing Glaze:

  • 2 Tbsp Coconut Mylk

  • 1/2 Tbsp Melted Coconut Oil

  • 6 Tbsp Swerve Icing Sugar 

  •  1/2 Tsp Unicorn Superfoods Black Goji Powder

  • 1/2 Tsp Raw Nice Blue Spirulina Powder

Optional: Vegan Sprinkles... we used Goddess Provision Unicorn Sprinkles


What to do:

For Donuts:

  1. Preheat Oven to 350 F

  2. Melt down coconut oil

  3. In a large mixing bowl, toss in all ingredients and mix well

  4. Pour into a greased donut pan

  5. Bake for 20-23 minutes (this may depend on your oven)

  6. Let cool for 15 minutes

  7. Dip donuts in blue spirulina icing

  8. Freeze donuts for 5 minutes

  9. Drizzle donuts with black goji icing

  10. Dust with sprinkles

  11. Enjoy!
