The Colour Purple...Vegan Chocolate Chip Donuts

These donuts are the result of the following situation..."when you love vanilla, but your boy loves chocolate". You do both!  Chocolatey chocolate chip donuts glazed with black goji icing and swirled with vanilla coconut whip. Best of both worlds right? Oh, and you gotta make the donuts pop with some superfood 'colourants'. We went with purple, because why not?


Gluten Free & Vegan Double Chocolate Chip Donuts Recipe



What you need:


What you need for donuts:

  • 2 Cups Brown Rice Flour

  • 1 1/3 Cup Unsweetened Coconut Milk

  • 1/2 Cup + 2 Tbsp Coconut Sugar

  • 1/2 Cup Melted Coconut Oil or Olive Oil

  • 1/4 Cup Unsweetened Apple Sauce

  • 2 Tbsp Unsweetened Coconut Yogurt

  • 1 Tsp Cinnamon

  • 1/4 Cup Raw Cocoa Powder

  • 1/2 Cup Vegan Chocolate Chips

  • 1 Tbsp Raw Apple Cider Vinegar

  • 1 Tbsp Baking Powder (I promise it's not too much)

  • 2 Tsp Baking Soda

What you need for black goji icing:

  • 1 1/2 Cup Organic Icing Sugar

  • 1/2 Tsp True Vanilla

  • 1 1/2 Tbsp Coconut Mylk

  • 2 Tsp Unicorn Superfoods Black Goji Powder 

What you need for vanilla coconut whip:

  • 1/2 Tub So Delicious Coconut Whip

  • 1 Tbsp Organic Icing Sugar

  • 1 Tbsp Vanilla Soy Mylk

  • 2 Tsp True Vanilla 

  • 1 1/2 Tsp Unicorn Superfoods Black Goji Powder

  • 1/2 Tsp Raw Nice Pink Pitaya Powder


What to do:

What to do for donuts:

  1.  Preheat oven to 350 degrees

  2. Lightly grease a donut baking pan

  3. In a large mixing bowl, mix in coconut milk, apple cider vinegar, and baking soda

  4. Let curdle for two minutes

  5. Mix in all other ingredients

  6. Pour batter into donut molds (the batter may be runny, but it makes the donuts really fluffy)

  7. Bake for 19-23 minutes

  8. Let sit in pan for 5 minutes

  9. Remove from pan and let cool for 20- 30 minutes

  10. Dip in icing glaze

  11. Let dry for 15 minutes

  12. Dip in coconut whip 

  13. Optional: sprinkle with vegan sprinkles

  14. Eat


What to do for black goji glaze/icing:

  1. In a medium sized mixing bowl, whip icing sugar and coconut mylk (if it is too thick add in more coconut mylk)

  2. Whip in black goji and vanilla

  3. Glaze your donuts!


What to do for vanilla coconut whip:

  1. In a large mixing bowl, whip all ingredients together

  2. Dip in donuts & twist

  3. Enjoy
