I want pizza... p i z z a

We all love pizza, but some of us (like me) have sensitive and vulnerable bellies that cannot handle the regular good stuff (what a drag). I've been craving pizza for a while now, but I always ran away from the idea because I have to make my own crust and it gets a bit time-consuming. That's until I realized how little time buckwheat crust takes to prepare! It's life-changing. The other day I made a vegan buffalo pizza with sweet potato cheese for me and Sam, I loved it so much I was really eager to share. 

Gluten Free Buckwheat Pizza Recipe with Buffalo Tempeh and Sweet Potato Cheese

Ingredients:

Gluten Free Buckwheat Pizza Crust:

  • 2 & 1/4 Cup Buckwheat Flour (I recommend light but I used dark in this recipe)
  • 1/2 Cup  + 2 Tbsp Warm-ish Filtered Water
  • 1 Tbsp Raw Apple Cider Vinegar
  • 1 Tsp Olive Oil
  • 1 Tsp Pink Salt
  • 1 Crushed Garlic Clove
  • 1/2 Tsp Black Pepper
  • 1 Tsp Garlic Powder
  • 1 Tsp Oregano
  • 1 Tsp Basil
  • 1/4 Tsp Paprika
  • 1 Tsp Raw Maple Syrup

Buffalo Tempeh:

  • 1 Packet Tempeh
  • 1/2 Tbsp Siracha
  • 2 Tsp Smoked Paprika
  • 1/4 Tbsp Apple Cider Vinegar
  • 1/4 Tsp Cayenne Pepper
  • 1/4 Tsp Garlic Powder
  • 2 Tsp Tamari

Sweet Potato Cheese:

  • 1 1/2 Medium Sized Sweet Potatoes
  • 1 Tbsp Coconut Oil
  • 1/4 Tbsp Coconut Kefir
  • 1/3 Cup Coconut Mylk
  • 1/2 Tbsp Yeast Flakes
  • 1 Tsp Pink Salt

Directions:

Gluten Free Buckwheat Pizza Crust:

  1. Preheat oven to 400 degrees Fahrenheit and line a pizza pan with parchment paper
  2. Lightly toss flour on parchment paper
  3. Combine dry ingredients in a large bowl
  4. Add olive oil, maple syrup, and apple cider vinegar to dry ingredients. Mix well.
  5. Slowly add in water. 
  6. Mix dough with hands 
  7. Knead dough
  8. Transfer from the bowl onto the pizza pan covered in parchment paper and roll flat. You can make your pizza a square or a circle.
  9. Bake for 8-12 minutes (this will depend on your oven).

Buffalo Tempeh:

  1. Crumble tempeh into small pieces (resembling a mock meat).
  2. Combine seasoning ingredients in a bowl. 
  3. Toss tempeh into the bowl and marinate.
  4. Bake for 15 minutes on 400 degrees Fahrenheit (you can put it in 5 minutes before the pizza). 

Sweet Potato Cheese:

  1. Chop and Peel Sweet Potatoes
  2. Boil or roast the sweet potato until soft (I've done both and either way it tastes great)
  3. Once softened, combine all ingredients for sweet potato cheese in a food processor until smooth. 
  4. Add more yeast flakes if desired.

Pizza Construction:

  1. Once the crust has cooked through, layer with tomato sauce or pizza sauce.
  2. Sprinkle with buffalo tempeh until the pizza is covered.
  3. Drizzle with sweet potato cheese or use all over.
  4. Optional: top with tamari marinated kale and fresh pineapple
  5. Bake for 6 minutes
  6. Broil for 2 minutes
  7. Enjoy!
