Beet Bliss Balls

My new favourite mid-day snack are bliss balls full of superfoods and adaptogens!

Vegan Gluten Free and Nut Free Beet and Coconut Bliss Balls Recipe:

Ingredients:

  • 1 Cup Dates

  • 1/2 Cup Coconut Flakes

  • 1/4 Cup Hemp Seeds

  • 2 Tbsp Gluten Free Oats

  • 3 Tbsp Coconut Flour

  • 1 Tsp Cinnamon

  • 2 1/2 Tbsp Cacao Powder

  • 1 Tbsp Pumpkin Seed Protein Powder

  • 2 Tsp Beetroot Powder

  • 2 Tsp Mucuna Pruriens

  • 2 Tsp Reishi

  • 1 1/2 Tbsp Maple Syrup

Directions:

  1. Soak dates overnight

  2. Blend all ingredients in a food processor

  3. Form into balls using 1 1/2 tablespoons of mixture

  4. Let firm in fridge for a few hours

  5. Optional… roll in beet powder (if you don’t mind the taste) or roll in beet powder and coconut flakes with coconut sugar (1 tsp beet powder, 1/4 cup coconut flakes, and 2 tsp coconut sugar.. all blended up)

  6. Let firm for a few more hours in the refrigerator

  7. Eat!
