These Donuts "Blue" Us Away!

Although we love our Homer donuts, the flavour and texture of these babies really 'blue' us away. Here's a simple one-bowl cinnamon coconut sugar donut recipe that is gluten free and vegan! We love one-bowl recipes, it makes life in the kitchen that much easier. 

Fluffy Vanilla Donut Recipe


What you need:


For Donuts:

  • 2 Cups Brown Rice Flour

  • 1 1/4 Cup Unsweetened Coconut Milk

  • 1/2 Cup + 2 Tbsp Coconut Sugar

  • 1/2 Cup Melted Coconut Oil or Olive Oil

  • 1/4 Cup Unsweetened Apple Sauce

  • 2 Tbsp Unsweetened Coconut Yogurt

  • 1 Tbsp Vanilla

  • 1 Tbsp Cinnamon

  • 1 Tbsp Raw Apple Cider Vinegar

  • 1 Tbsp Baking Powder (I promise it's not too much)

  • 2 Tsp Baking Soda

For icing:

  • 1/2 Cup Icing Sugar

  • 1 Tbsp Coconut Sugar

  • 1/2 Cup Coconut Cream

  • 1 Tsp Vanilla

  • 1 1/2 Tsp Blue Spirulina

  • A handful of sprinkles

What to do:

For Donuts:

  1.  Preheat oven to 350 degrees

  2. Lightly grease a donut baking pan

  3. In a large mixing bowl, mix in coconut milk, apple cider vinegar, and baking soda

  4. Let curdle for two minutes

  5. Mix in all other ingredients

  6. Pour batter into donut molds (the batter may be runny, but it makes the donuts really fluffy)

  7. Bake for 23 minutes

  8. Let sit in pan for 5 minutes

  9. Remove from pan and let cool for 20- 30 minutes

  10. Dip in icing glaze

 For icing glaze:

  1. Place all ingredients in a mixing bowl

  2. Using a hand mixer, whip ingredients for 5 minutes

  3. Refrigerate for 5 minutes

  4. Dip in donuts
