Grain Free Chickpea Chocolate Chip Cookie
Grain Free, Vegan, and Gluten Free Chickpea Chocolate Chip Cookie Recipe
1 Cup Chickpea Flour
1/3 Cup Melted Pumpkin Seed Butter
1/3 Cup Melted Coconut Oil
1/4 Cup Maple Syrup
1 Flax Egg
2 Tsp Vanilla Extract
4 Tsp Arrowroot Powder
1/4 Tsp Pink Salt
1/2 Tsp Baking Powder
1/2 Tsp Baking Soda
Pinch of Nutmeg
1/4 Cup Coconut Sugar
1/2 Cup Vegan Chocolate Chips
In one bowl combine wet ingredients until smooth
In another bowl combine dry ingredients until smooth
Slowly add dry to wet ingredients.
Fold in chocolate chips
Cover with a cloth and refrigerate for 30 minutes.
Whilst the dough is cooling, preheat oven to 350 D F and line a baking sheet with parchment paper.
Remove dough from the fridge, roll 3 tbsp of batter into a ball and flatten with your palm.
Bake for 13 to 15 minutes
Let cool on pan
Optional: sprinkle with sea salt.
