Vegan Vanilla Cupcake Recipe


1 1/2 Cup Light Sprouted Buckwheat Flour
1/2 Cup Oat Flour
1 1/2 Tbsp Vanilla Extract
1 Tbsp Lemon Juice
1 1/4 Cup Vanilla Oat Mylk
1 Cup Coconut Sugar
1/4 Cup Melted Coconut Oil
1/4 Cup Melted Seed Butter of Choice
2 Tsp Arrowroot Powder
1/8 Tsp Cinnamon
1/2 Tsp Baking Soda
1 Tsp Baking Powder
1/2 Tsp Pink Salt


1. Preheat oven to 350 D F and line muffin pan with silicone muffin cups!
2. Prepare vegan butter mylk... whip lemon juice & oat mylk together and set aside until it curdles
3. Combine all wet ingredients in one bowl until smooth
4. Combine all dry ingredients in another bowl
5. Slowly add dry to wet ingredients
6. Fill up muffin cups with batter
7. Bake for 32 to 35 minutes (reduce time if not using silicone... check at 25 minutes)
8. Let cool in pan for 15 minutes
9. Transfer to cooling rack and let cool for 15 minutes
10. Enjoy as is or ice them!
