Sugared Coconut


Pumpkin and Ginger Bundt Cake

Very Easy Vegan and Gluten Free Pumpkin and Ginger Bundt Cake that is fluffy AF Recipe

1 Cup Pumpkin Puree
1/2 Cup Pure Olive Oil or Melted Coconut Oil
2 Tsp Vanilla
1 Tbsp Apple Cider Vinegar
2 Tsp Lemon Juice
1/2 Cup Coconut mylk (or any plant mylk)
2 Tbsp Maple Syrup
1/2 Tbsp Molasses
1 Flax Egg
2 1/2 Cups Oat Flour
1 Cup Coconut Sugar
1 Tsp Baking Soda
1 Tsp Baking Powder
1/2 Tsp Sea Salt
1 Tsp Nutmeg
3 Tsp Cinnamon
1/2 Tsp Clove
2 Tsp Ginger


1.Preheat oven to 350 Degrees and grease a bundt cake pan with coconut oil.
2. Combine wet ingredients
3. Combine dry ingredients
4. Slowly add dry ingredients to wet. Mix well.
5. Pour into the cake pan.
6. Bake for 55 minutes
7. Let cool
8. Ice with vegan vanilla buttercream icing... 1/2 cup vegan butter. 2 1/2 cup icing sugar. 3 Tsp coconut mylk. 1 tsp vanilla. Whip up & spread on cake. Sprinkle with cinnamon.
