Vegan Matcha Cookies

Grain Free, Gluten Free and Vegan Matcha Chocolate Chip Cookie Recipe

Ingredients:

2 Flax Eggs
1/4 Cup Melted Tahini
1/4 Cup Melted Coconut Oil
3 Tsp Vanilla Extract
1/4 Cup Maple Syrup
3 Tsp Lemon Juice
1/4 Cup Coconut Flour
2 Tbsp Shredded Coconut
3 Tbsp Arrowroot Powder
1/2 Cup & 3 Tbsp Tapioca Flour
1/8 Tsp Cinnamon
1/8 Tsp Pink Salt
1/4 Tsp Baking Soda
1/2 Tsp Baking Powder
1/2 Tbsp Ceremonial Matcha
1/2 Cup Vegan Chocolate Chips

Directions:

1. Preheat oven to 350 D F & line a baking sheet with parchment paper
2. Prepare flax eggs
3. Whisk together all wet ingredients in one bowl
4. In another bowl mix dry ingredients
5. Slowly add dry to wet ingredients
6. Fold in chocolate chips
7. Scoop up 2 tbsp of cookie dough. Roll into a ball. Place on parchment & flatten with palm.
8. Bake for 12 to 14 minutes
9. Let rest on pan for 30 minutes.
10. Remove from pan & enjoy
