The Real Homer Donut

I know that we've been calling all of our donuts the 'Homer' donut, but I promise these are the real deal! They are pink, fluffy, glazed, and full of sparkles just how Homer likes them. Making these donuts made me really want to watch the Simpons movie again...actually I may just do that right now. 

The base of these donuts are actually the same as our "Blue us Away" donuts. When we tried to make these donuts the other day we accidentally used the wrong kind of baking powder (did anyone else know that this was a thing?) and the donuts became a donut cake (which was actually quite delicious, but not at all photo worthy). So, when you do make these donuts make sure that your baking powder does not include baking soda in it or else you will also end up with a donut cake.

  • 2 Cups Brown Rice Flour

  • 1 1/4 Cup Unsweetened Coconut Milk

  • 1/2 Cup Coconut Sugar

  • 1/2 Cup Melted Coconut Oil

  • 1/4 Cup Unsweetened Apple Sauce

  • 2 Tbsp Unsweetened Vanilla Coconut Yogurt

  • 1/2 Tbsp Vanilla

  • 1/2 Tbsp Cinnamon

  • 1 Tbsp Raw Apple Cider Vinegar

  • 1 Tbsp Baking Powder (I promise it's not too much)

  • 2 Tsp Baking Soda

  • 1/4 Tsp Pink Salt

What you need for glaze:

  • 1 1/2 Cup Organic Icing Sugar

  • 1 1/2  or 2 Tbsp Coconut Mylk

  • 1/2 Tbsp Raw Nice Pink Pitaya Powder

  • 1 Tsp True Vanilla


What to do:

What to do for donuts:

  1.  Preheat oven to 350 degrees

  2. Lightly grease a donut baking pan

  3. In a large mixing bowl, mix in coconut milk, apple cider vinegar, and baking soda

  4. Let curdle for two minutes

  5. Mix in all other ingredients

  6. Pour batter into donut molds (the batter may be runny, but it makes the donuts really fluffy)

  7. Bake for 23 minutes

  8. Let sit in pan for 5 minutes

  9. Remove from pan and let cool for 20- 30 minutes

  10. Dip in icing glaze

  11. Let dry for 15 minutes

  12. Dip again

  13. Optional: sprinkle with vegan sprinkles

  14. Eat

What to do for glaze:

  1. In a medium sized mixing bowl, whip icing sugar and coconut mylk (if it is too thick add in more coconut mylk)

  2. Whip in pink pitaya powder and vanilla until the colour is evenly spread

  3. Glaze your donuts!
