Blue Vibes Coconut Porridge

Sam absolutely loves oatmeal, he could eat it for every meal and be perfectly content, where as I love fruity dishes with a little bit of chocolate (or a bunch). This is an example of the compromises we make when it comes to breakfast, a coconut porridge topped with vegan chocolate chips, homemade granola, chia seeds, and fresh blueberries. Both of our bellies were really happy with this one. 

Blue Spirulina Coconut Porridge Recipe:



What you need:

What you need for the Coconut Blue Spirulina Porridge:

  • 1/4 Cup Gluten Free Oats

  • 2 1/2 Cups of Coconut Mylk

  • 1 Tsp Vanilla

  • 1 Tsp Cinnamon

  • 1 Tsp Maca

  • 1/2 Tsp Chaga

  • 1 Tsp Cocoa Powder

  • 1/2 Tbsp Maple Syrup

What you need for the Homemade Granola:

  • 3/4 Cup Gluten Free Oats

  • 1/4 Cup Pumpkin Seeds

  • 1/3 Cup Coconut Flakes

  • 1 Tbsp Molasses

  • 1/2 Tbsp Cocoa Nibs

  • 1 Tsp Cinnamon


What to do:


What to do for Porridge:

  1. Pour in oats and coconut mylk into a small sauce pan

  2. Bring to a boil

  3. Let simmer for 5 minutes

  4. Mix in all other ingredients

  5. Pour into a bowl

  6. Top with goodies

  7. Enjoy

What to do for Granola:

  1.  Preheat oven to 350 Degrees F

  2. In a small mixing bowl, pour in all granola ingredients and mix with hands

  3. Pour granola onto a parchment lined baking sheet

  4. Bake for 10 minutes or until crispy
