Sugared Coconut


No Bake Granola Bars

No Bake Vegan Nut Free and Gluten Free Granola Bar Recipe:


2 Heaping Cups Gluten Free Rolled Oats
1/2 Cup + 2 Tbsp Maple Syrup
1/2 Cup Melted Soy Bean Butter or any nut or seed butter
3/4 Cup Pumpkin Seeds
1/4 Cup Unsweetened Vegan Chocolate Chips
1/4 Cup Chopped Dates or any other dried fruit
4 1/2 Tbsp Gluten Free Oat Flour
1/2 Tsp Pink Salt
1 Tsp Vanilla
2 Tbsp Seeds of Choice, I used watermelon seeds but sunflower seeds will also work!


  1. In one bowl whisk together all wet ingredients.

  2. Slowly add in oat flour, salt, and rolled oats.

  3. Fold in chocolate chips, dried fruit and seeds.

  4. Scoop granola in a parchment lined loaf pan or cake sheet.

  5. Flatten with a spatula. Make sure it is very packed.

  6. Refrigerate until they firm and harden (i suggest overnight)

  7. Remove from pan and cut into bars

  8. Drizzle with melted chocolate

  9. Pop in fridge to harden

  10. Enjoy
