We Be Jammin This Valentine's Day Parfait

As Valentine's Day approaches, we are inspired by the colours of love...reds, pinks, purples, and white. I truly believe that food is one of the best ways to a person's heart (or maybe just mine ha). What better way to show someone special that you love them than with some delicious food or this yummy strawberry and coconut cream parfait? Not just on Valentine's Day, but everyday. It's the small everyday acts that really count. 


Berry Delicious Parfait Recipe


What you need:

What you need for Raspberry and Strawberry Jam:

  • 1/2 Cup Raspberries 

  • 1/2 Cup Strawberries

  • 2 Tbsp Coconut Sugar

  • 1 Tsp Cinnamon

  • 2 Tsp Lemon Juice

What you need for Strawberry Coconut Whip:

  • 1 Can Full Fat Coconut Mylk

  • 1/3 Cup Strawberries

  • 1/4 Cup Coconut Sugar

  • 1 Tsp True Vanilla Extract (Alcohol Free)

  • 1 Tsp Pink Pitaya Powder

What you need for Pink Pitaya Coconut Yogurt Drizzle:

  • 1/2 Cup Vanilla Coconut Yogurt

  • 1 1/2 Tbsp Coconut Mylk

  • 1 Tsp Raw Nice Pink Pitaya Powder


What to do:

What to do for Raspberry and Strawberry Jam:

  1. In a medium sized mixing bowl, mash the raspberries and strawberries

  2. Add in coconut sugar, lemon juice, and cinnamon

  3. Mash the mixture again

  4. Using a wooden spoon, ensure that all ingredients are mixed in 

What to do for Strawberry Coconut Whip:

  1. In a food processor, whip all ingredients

  2. Refrigerate for 40 minutes

What to do for Coconut Yogurt Drizzle:

  1. In a small mixing bowl, whip all ingredients together

How to construct the Parfait (Will make about 4 individual sized parfaits):

  1. In a small jar, pour in 1/3 cup of strawberry and raspberry jam

  2. Layer with a handful of strawberries

  3. Layer with 1/3 cup of strawberry coconut whip

  4. Top with coconut flakes, pomegranate seeds, strawberries, dragon fruit balls, and prickly pear balls

  5. Drizzle with pink pitaya coconut yogurt

  6. Enjoy
