Vanilla Pitaya Buckwheat Porridge

Sometimes all you need is a big bowl of warming porridge brightened up with a bunch of fruits and our favourite superfood 'colourants'... Raw Nice Pink Pitaya Powder! Here's a delicious vanilla pink pitaya buckwheat porridge to start your day. 


Vanilla Buckwheat Pink Pitaya Porridge


What you need:

  • 1/2 Cup Buckwheat Flakes

  • 2 1/2 Cups Vanilla Soy Mylk

  • 1/2 Cup Water

  • 1 Tbsp Raw Maple Syrup

  • 1 Tsp True Cinnamon

  • 1 Tsp True Vanilla

  • 1/4 Tsp Clove

  • 1/4 Tsp Raw Cocoa Powder

  • 2 Tsp Pink Pitaya Powder


What to do:

  1. In a small pot, bring soy mylk and water to a boil

  2. Add in buckwheat flakes

  3. Let simmer on low for 5 minutes stirring occassionally

  4. Mix in cinnamon, vanilla, cocoa, maple syrup, clove, and pink pitaya powder

  5. Let simmer for 2 minutes

  6. Pour into a bowl

  7. Top with goodies (we used rose petals, watermelon hearts, pomegranate seeds, chia seeds, strawberries, figs, and raspberries)

  8. Enjoy!
