Oh Summer, we're pining for you.
It's the middle of April and we're currently stuck in an ice storm. An ice storm is not something that I think of when I describe spring. How about you? The fluctuations in Canadian temperature and weather are scary indicators (in our opinion) of climate change which are hard to ignore. It forces us to think of our role in the degradation of the environment. We truly believe that being vegan is one of the best things that you can do for the environment. So let's skip the ice cream and instead replace it with a creamy pineapple #nicecream. This delicious and refreshing nicecream also gave us some tropical vibes, which we are in need of right now.
Refreshing Pineapple Nicecream Recipe
What You Need:
2 Cups Frozen Pineapple
1/2 Frozen Banana
1/4 Cup Coconut Water
1 Tbsp Coconut Mylk
1/2 Tbsp Frozen Blueberries
1 1/2 Tsp Blue Spirulina
What to Do:
Blend all ingredients together in a food processor.
Freeze as you go.
Scoop into a bowl.
Top with dragon fruit, raw chocolate, toasted coconut, banana, coconut chunks, and delicious seeds!
