Curried Chickpea and Cauliflower Burgers

These burgers are great for a weekly meal prep or for a grand barbecue with friends.

Curried Chickpea and Cauliflower Burger Recipe:

Ingredients:

1 Large Cauliflower
1 Large Sweet Potato
1 Cup of Cooked Quinoa 
½ Yellow Onion
2 Cloves of Garlic
1 Tbsp Olive Oil
2 Tsp Cumin
1/2 Tsp Turmeric
½ Tsp Garlic
2 Tsp Curry Powder
2 Tsp Smoked Paprika
1 Cup Chickpeas
1 Cup + 4 Tbsp Oats
Sea Salt to taste
Optional (2 Tbsp Hot Sauce or BBQ)

Directions:

  1. Preheat oven to 350 Degrees and line a baking sheet with parchment paper.

  2. Chop cauliflower into florets and cube sweet potato.

  3. Bring one large pot of water to a boil and a small pot of water to a boil .

  4. Add cauliflower and sweet potato, onion, and garlic to the large pot of boiling water. Boil veggies for 15 minutes or until soft.

  5. Whilst the veggies are boiling, prepare the quinoa in the small pot.

  6. Whilst the veggies & quinoa are cooking, sautee chopped onions & garlic in olive oil on low until golden. Put aside.

  7. Once the veggies are cooked, drain them of their water.

  8. Add all burger ingredients to a food processor. Blend until smooth.

  9. Use a ⅓ cup of mix to form burgers and roll in breadcrumbs, they will be quite wet until you roll them in the breadcrumbs.

  10. Place on baking sheet, and bake for 15-18 mins on each side. Flipping once.

  11. Freeze half of batch in freezer bags set apart by parchment paper (if it is for a meal prep)
