My Vegan Day with @vegan.fuel

We asked Caroline (or Karolina) from @vegan.fuel to share with us what she eats in a day. Caroline is a 17-year-old girl from Poland, who is currently studying at the United World College School in the United States. Caroline started her blog and youtube series a year ago to inspire others to become vegan and that is still her goal today! On her blog, Caroline shares vegan meals, desserts, and smoothie bowls. Breakfast:

Usually, I eat a smoothie bowl for breakfast. Today I had cooked millet blended with 2 bananas and some blueberries. Topped with banana, strawberries, blueberries, coconut, goji berries, mulberries, dates syrup, cacao nibs, and puffed millet.

Lunch:

Today for lunch I had baked oat waffles with sliced banana, strawberries, cacao nibs, and maple syrup. Do you prefer sweet or savoury lunches?

Dinner:

For dinner, I normally make a bowl of plant-based goodies full of vegetables, whole foods, and protein. Today I had a plate of goodies which consisted of baked sweet potato, mushrooms and purple cabbage. Served with fried tomato, baked sesame tofu, and spinach which I baked with onion and garlic for extra flavour.

Snack / Dessert:

For a snack or after dinner treat, I like to snack on fruit and nuts. After dinner I had, two bananas, two apples, one orange, two apricots, and a small bowl of almonds
